I will definitely include vegetarian recipes in upcoming posts, but in regards to this particular recipe, I would substitute beans for the meatβeven three kinds if you're up for that kind of bean saladβand then add some liquid smoke and smoked Salt to help make the flavors work π
Or, you could go in a different direction and make more of a celery-nut pate. I'll think about a few proper adaptations, but Ani Phyo has a great celery-almond pate that could work! I'll think on it!
