This one really depends upon your preferences and feelings about meat substitutes! I will definitely include vegetarian recipes in upcoming posts, but in regards to this particular recipe, I would substitute beans for the meatβ€”even three kinds if you're up for that kind of bean saladβ€”and then add some liquid smoke and smoked Salt to help make the flavors work πŸ˜€

Or, you could go in a different direction and make more of a celery-nut pate. I'll think about a few proper adaptations, but Ani Phyo has a great celery-almond pate that could work! I'll think on it!
